I’ve been seeing alot of stuffed pepper recipes out in blog land so I wanted to put my own healthy spin on this one.
This dish was super easy to prepare and boyfriend approved. Eating healthy can still be tasty.
Ingredients:
4 assorted peppers, tops sliced off and seeds removed
1.5 lbs ground leanest turkey
28 oz can of diced tomatoes, drained
1 tbsp olive oil
2 tbsp tomato paste
2 stalks celery, diced
1 yellow onion, diced
2 tsp garlic, minced
2 tsp dried oregano
1 tsp dried basil
1/4 tsp red pepper flakes
2 tsp salt
1 c 1% mozzarella cheese
Directions:
Preheat oven to 350 degrees
In a large skillet, heat the olive oil over medium heat. Add the onion and celery and saute for 5 minutes until soft. Add the garlic and continue sauteing for another minute.
Add the ground turkey and brown with the veggies. Approx 5 minutes.
Add the diced tomatoes, salt, basil, oregano, and red pepper. Bring mixture to a simmer and cook for 15 minutes, until sauce isn’t runny. Remove pan from heat and stir in the cheese.
Place the peppers in a baking dish and fill with mixture. Cover with tin foil to seal.
Bake peppers for 30 minutes. Top with a dash of mozzarella and SERVE!
This recipe is lean and green approved for all of my clients. A great balance of your allotted daily protein and vegetable serving.
